Nunah’s Timeless Corn Dip

EEP! I have been so excited to drop this recipe! It is one of my favorites.. and it is so special to me! It reminds me of so many fun memories at my parent’s house! Especially in the heat of the summer around my birthday time.. or after a long day at the lake. Or when we would go on vacation as a family or at the cabin. I picture a room full of all my favorite people, my cousins, siblings, friends.. all in swimsuits with towels wrapped around and matted down, wet summer hair.. sun kissed skin… all of it. Well, we are actually currently on a spring break trip and while I have purposely put my laptop and camera away for the week so I wasn’t tempted to do any work, I made this corn dip and OOPS! I can’t help myself but share this with you! You’ll see why.. OMG.

Have you ever been to a potluck type of party and you eat a massive chip full of the best corn dip you’ve ever had in your life? What do you do next? Hit the panic button for the rest of the time and hunt down whoever made it.. Search the room until you find the culprit chef of the best corn dip ever. Well let me tell you, this happens every time I make this corn dip. People will seek me out.. Usually making some sort of public announcement where I feel like I’m in trouble, or like someone let out the family dog and it was lost or something.. Then only to quickly realize.. FEW…. It was my corn dip again.. Making the crowd go crazy.. JUST A SHOW STOPPER.

I must give credit where credit is do here! My beautiful mom and grand hostess of them all has been making this corn dip for years. I changed it up of course, because I have a hard time following rules and someone else’s recipe.. But the concept is definitely hers. So we have to set the paths straight on that! If you have ever been to my mom’s house in the summer for one of her iconic summer parties, then you have had this corn dip!

I have tweaked her recipe and made it my own by swapping a few ingredients, adding paprika (because what is a dip without paprika?!) and making it a bit on the healthier side with the greek yogurt addition!

SO EASY. This is not only a show stopper recipe but it is so simple. You can’t mess it up, I promise.

QUANTITY. I am in it for the quantity! It makes a salad bowl size! So plan accordingly! I always think ooohhh this is so much! How exciting! I can save it for my lunch tomorrow! NOPE! It ALWAYS gets eaten, without any remorse. BOWL LICKED CLEAN. EVERY. TIME.

VERSATILE. I dare you to find a meal that this dip doesn’t go with! It’s the perfect addition to any and every meal! Summer… Spring… Fall.. this dip is perfectly suitable for any season.

FLAVOR. Oh my gosh the flavors.. its so fresh and light yet somehow brings a crunchy and creamy texture! You have to take the biggest bite so it goes all over and hits every taste bud because its so simple yet bursting with so many fresh flavors!

Anyway, I will let you get back to cooking, I just had to let you know that you are about to make the best corn dip of your life, so when you cook it up, do it with passion… with the biggest smile on your face.. knowing you are about to make someone’s entire week or month.. maybe even make their year with this recipe. So do it with so much JOY just like I do! And don’t forget to make some memories while consuming it.. so you make it your own story!

INGREDIENTS

4 (10 oz) bags frozen corn

1 Bunch of cilantro

1 Bunch of green onions (use the green and white parts!)

1 Jalapeno pepper (seeds out and diced)

1 Green Bell Pepper finely diced

1 Cup shredded mexican cheese (I used DAYA dairy- free mexican blend)

1/2 Cup greek yogurt plain (can also do DF plain yogurt to make it dairy free)

1/2 Cup organic mayonnaise

1 Teaspoon Cumin

1 Teaspoon Salt

1 Teaspoon Pepper

1 Teaspoon Paprika

INSTRUCTIONS

  1. Mix all ingredients together with a rubber spatula

  2. Chill for 10-15 mins to marinate flavors

  3. Serve with your favorite pita chips, tortilla chips, corn dippers or fritos!
