Sourdough Almond French toast

As you dig into these pillowy sweet pieces of French Toast, you will want more before you can even finish. Growing up my mom made breakfast for all six of us kids every morning. Sorry if I sound like a broken record here but I need to just describe this to you and take you into my time machine of breakfast inspo. Ok back to my mom’s legendary breakfasts: so it was not just you’re average bowl of lucky charms or cinnamon toast crunch. It was as if I woke up and came down to my own personal Original Pancake House with an in- home personal chef. It was jaw- dropping, truly. On any given morning, it was french toast, pancakes, omelettes.. It wasn’t because she was bored and had all the time on her hands, no! She was setting a standard…. a tone in our house for just starting the day off right. Now that I am a mom myself of three, I absolutely bend over backwards to try to meet her incredibly high standards of breakfast, because I think it is just the coolest thing ever. Never a missed morning. My friends always wanted to sleep over at my house simply because of “Big Janer’s french toast,” that she would whip up for us on any given Saturday. Between the six of us kids, there would be anywhere from 6-20 people at our kitchen island indulging in fun convo and french toast on a wintry Saturday morning. It was SUCH a joy to be a part of.

I’m posting the recipe for these, not because I think I am a genius for coming up with some special french toast recipe, (these are perfectly decadent and special though), but rather because I had to learn too how to make this!

I called my mom in college one Saturday and put her on speakerphone while she made all my roomates laugh with her silly jokes and she talked me through each step on making the perfect french toast, and here I am to do the same for you! So whether you are in college and making these for your roomies, or you’re a mama like me right now, these are the most delicious breakfast for any morning! And too good not to share!

The key to this recipe is the sourdough bread, so whether you make your own, or you get yours delivered to your door via instacart (not telling you which one I do haha) the sourdough is the main ingredient here not to change or skimp on.

Here is a pic of my griddle! This is how my mom whipped out hundreds of pieces of french toast for me and my siblings and our hungry friends. I remember putting this huge griddle on our registry and getting it at one of our wedding shower and the moms were all laughing at me… “a girl after her mothers own heart.” Haha, truly! I seriously recommend this to anyone though, its great for grilled cheese for a crowd, pancakes, etc.

INGREDIENTS

1 Teaspoon Almond Extract

1 Teaspoon Vanilla Extract

1/4 Teaspoon Salt

Pinch of Cinnamon

1/2 Cup of Oat Milk

6 Eggs

1 Loaf Sourdough Bread

Olive Oil Drizzle

INSTRUCTIONS

  1. Heat the griddle to 350 degrees

  2. In a large flat bowl, mix Eggs, Milk, Almond, Vanilla, Cinnamon, Salt, Olive Oil

  3. Spray your pan before beginning

  4. Thoroughly soak each fresh cut piece of sourdough bread into the egg mixture and place on hot griddle. Cook each side until lightly brown and cooked through

  5. Serve with fresh Blueberries, Maple Syrup, and Powdered Sugar. Enjoy!
