Smooth Willowy Green Glow Smoothie

NO MORE ICK GREEN SMOOTHIES! Let’s start with the name of this one… I take my kids on a two mile scooter loop (almost) every day. We scooter around this beautiful little pond where there are all these huge willow trees gushing over the path. Every time we get near the willow tree my kids stop at it and my two year old will say “Hi willow! Mommy Willow is waving to me!” He is convinced it is alive and it has human like powers. Ah I love their imaginative minds more than anything right now… Nothing more beautiful than the mind of a toddler.

I named this incredible smoothie after Willow, because of its similar properties! It truly FEELS alive and it GIVES ME life. Whenever I need a boost of energy, this is my go- to. Its sweet and has a rare protein factor that is hard to do in a leafy green smoothie which is what makes it so unique! I am not one that will slug some nasty swamp drink that has a green chard residue taste to it.. which is why I have crafted this tasty guy! My kids also love love love it so its a great way for them to get some greens in.

BEE POLLEN is a unique antioxidant with many health benefits including a whole array of B vitamins. (Note: omit for any bee related allergy or if an infant will be consuming. check with your doctor if this is okay for you to consume).

PINEAPPLE: I chose pineapple and peach combo to steer away from the normal mango type of flavor and bring in the powerful digestive enzymes that pineapple has to offer!

GREENS: if you are preparing your garden for spring, be sure you plant kale, parsely, spinach and enjoy this smoothie every day with your garden fresh greens! YUM.

INGREDIENTS

2 Cups Organic Apple Juice

1/2 Cup Frozen Pineapple

1 Tablespoon Unflavored Collagen powder

1 Tablespoon Pumpkin Seeds

1/2 cup Frozen Peaches

1/2 Cup Frozen or Fresh Kale

1/2 Cup Frozen or Fresh Spinach

1 Teaspoon Greens Powder (Optional)

1 Teaspoon Bee pollen

Pinch of Fresh Parsley (do not use dried parsely)


 

INSTRUCTIONS

  1. Blend all ingredients on high until there are no leafy chunks. I lean towards over blending than under blending

2. Split in two small mason jars, cheers with a friend and enjoy! Or keep it in one large mason jar and hide in your room and eat it alone so no one tries to steal it all from you. ITS THAT GOOD.
