Traditional Swedish Pancakes (Healthy Edition: GF DF option)
My husband’s family has this really sweet little cabin in northern Minnesota and they call it the garage, because it is truly a garage. Its one big cozy room with a bunch of mismatch beds and moose lamps. The kitchen is really just a stove that takes up a corner of the room… You might see where I’m going with this hah!
My husband and I were on the twin bed that was kiddie corner to the “kitchen” and it was one of my first experiences with his family at the cabin.. His mom pops out of bed first- always- and gets cooking away. Before I was cognitively even awake, the scent of these Swedish Pancakes wafted through the room, lightly tickling our noses into a famished state of mind!
I have the best memories with these! They are so elegant and beautiful and rich in so much history and culture, all wrapped up in a thin and delectable pancake.
My hopes as you are making these for your family and friends (or even just yourself) are that you would see the vision I have for them. They are more than just a breakfast food. They are a memory maker. Truly something that you can’t forget. The vanilla and the warm buttery smells that come from this are one that you will be triggered by and will be taken to a really sweet place. It will feel like you are walking through the streets of Paris but you can create this memory in your own kitchen!
I have never actually asked my mother in law for her exact cabin recipe, but I was laying in bed this morning and couldn’t help but jump up and write down these healthy and delicious ingredients, hoping they would have a similar vibe to them, and of course, they did! I loved adding collagen to these, because it adds extra protein without changing the taste at all.

Ingredients
▢ 1 Scoop Collagen Powder
▢ 1 Cup GF Flour (I only recommend this GF flour for this recipe!)
▢ 1 cup Oat milk (can substitute coconut, or almond)
▢ 8 Tablespoons butter or Ghee
▢ 1 Teaspoon Vanilla extract
▢ 6 Eggs
▢ 1/2 Cup Water
▢ 1/2 Teaspoon salt
▢ 2 Tablespoons coconut sugar
▢ Optional toppings: Bacon bits, Nutella drizzle, fresh fruit, strawberries, Raspberries, Banana slices, Powdered Sugar
INSTRUCTIONS
Heat up a non stick pan on medium heat over the stove
Blend ingredients in a blender until smooth
Pour about 1/4 cup onto the pan and swirl around until it is thinly covering the bottom of the pan and cook on both sides for 2-3 mins or until bubbles appear and golden brown
